Strawberry tart
Shortcrust pastry: see recipe for lemon tart (below)
Pastry cream :
250 g strawberries
1. While the shortbread pastry is baking (20-25 min at 160°C), heat the milk in a saucepan without bringing to the boil, then leave to cool.
2. In a bowl, make a ribbon with the Papondu, sugar and vanilla sugar, then add the flour.
3. Dilute with warm milk.
4. Return to the heat and stir continuously for 5-8 min until a firm consistency is reached.
5. Transfer the cream to a bowl and leave in a cold bain-marie for 10 minutes.
6. Filter the cream on contact and chill at +3°C.
7. Garnish the tart with pastry cream and strawberries.
